I loved In Bruges for all the inappropriate vulgar banter. Of course I went straight to the deleted scenes to find more, but there really isn't much.
DVD Review: In Bruges
There are some goofy bits that are not as sharp as what made it into the film. There is more talk about beer, complaining about tourism. It pays off in a sequence where Ray does in fact get drunk.
There is a weird encounter with a teddy bear that also pays off in a later deleted scene. There is some somber contemplation, vague and specific to Ray's backstory with the botched assignment.
There is more of Ray's pre-date jitters, he discusses the logic of drinking, they talk about the hitman business. There is some random violence.
Really the only outrageous dialogue is Ralph Fiennes' one line on the train. If you're as big a fan of In Bruges as I was, you'll want to hear every last line of it, but you'll probably agree the filmmakers made the right choices.
